I am new to Visual Cron. I am trying to use the email message task and to support this created a connection to our Exchange server using a functional account created for this purpose.

I can create the connection and see it in the server connections list. However, when I go to add an email task to the job and must select a connection it is not listed. Popping the connections dialog from there also shows the empty 'Connections' list. The very same list that previously showed it. If while looking at the empty connections list I choose 'edit' I am shown my Exchange connection as it should be 😲 . This feels like a bug in that if I can edit it but not not see it something is wrong.

Maybe I am misunderstanding the scope of these connections?

Please advise and thank you for any help.

You are mixing up SMTP Connections with IMAP Connections. You need to create an SMTP Connection. SMTP protocol is used for sending.
