Has anyone successfully setup a Connection using an openssh file (and) a task to connect to it to download / upload files?
I'm not sure which of the FTP task types I should use OR how to setup a Connection to use the key.
Any help appreciated.

You can create your keys under 'SSH keys' in the menu. I haven't tried it as we use WinScp for this (and then import the files in the same menu), but either way should work

Then use the SFTP SSH connection type with port 22. Chose authentication type 'public key' and select the key you have created
