Is there a way to trigger a job based on a file age? Basically if a file is greater then X, run trigger.

No, there is not.

You clould set up a job to trigger for every file and use a copy file task to copy the file if it's meets your conditions.
Than you can use a condition to check if the file has been copied and you can continue your job or stop.

Or, setup a time trigger that calls a Task with a File filter. Then you can pick up files older than a certain date.
